Slow Cooker Chicken Salad with Grapes & Pecans




We went to an outdoor children's classical music concert tonight with friends and took a picnic along for dinner. We had a great time and got to sit back and enjoy a delicious picnic and some wine while the kids ran around and played (we may have been told to quiet our kids down a couple of times..but they're 2...we still had a great evening though!) I made an organic chicken salad that Ted and I used to make a lot but haven't made in a while. I think the first time we ever made it was when we put together a picnic to take to the park when we first started dating :) It is really easy to make and tastes even better the next day.


Slow Cooker Chicken Salad with Grapes & Pecans

Ingredients
1 pound organic chicken breasts
2 cups organic chicken stock (or enough to just cover chicken)
1 tsp thyme
1 tsp oregano
1/2 cup chopped pecans
1 cup chopped celery
2 cup sliced organic red grapes 
1/2 cup light mayonnaise

(The store was out of organic grapes when I went yesterday so I unfortunately had to use conventional grapes. Grapes are one of the things I always try to buy organic due to being high in pesticides)

Directions
1. Place chicken breasts in slower cooker and sprinkle with thyme and oregano

2. Pour chicken stock into slow cooker

3. Cook chicken on low for 5 hours

4. Using two forks, shred chicken breasts and let cool. It should just fall apart due to being very tender. (I made the chicken the night before and just put the shredded chicken in the fridge for making the chicken salad the next morning)




5. Place chicken in medium mixing bowl

6. Fold in pecans, celery, grapes and mayonnaise to chicken until mixed evenly

Serve on multigrain rolls




What are the nutritional benefits of this meal? chicken is a great source of protein; pecans are an excellent source of monounsaturated fatty acids and phenolic antioxidants, vitamin E, B vitamins and minerals like manganese, potassium, calcium, iron, magnesium, zinc and selenium; the grapes are a good source of vitamins C, A and K.
